How do Offline Maps Work?

Say you have downloaded an offline map and go to fly in the area downloaded. How is the downloaded map pulled up, or utilized? Automatically chosen, or selected somehow?
Also, are the maps satellite, or just as they appear in the download page?

The map is automatically pulled up by the app. It is a basic map, with features and roads. It is not satellite. It allows you to have an idea of where you are flying, instead of a blank page.
 
ISTR that you can choose Basic, Hybrid and Satellite views if you tap the map and make it fullscreen.

Always make sure that you have all the area that you need downloaded, so that you can put your device in airplane mode when you fly and still have the maps.

The drone uses its on board GPS to put a location mark of itself on the downloaded map, but it doesn't need the map to know where it is, it will still RTH to the stored co-ordinates without a map.

The map is really for your benefit, so you know where it is in relation to the terrain, as suprPHREAK says.
