Can I add users to the DJI app so we can log our own flight times etc?

No. But you could log out and then they could log in with their own DJI account.

Or they could use a separate mobile device and be logged in with their own DJI account.

Yep. I have my iPhone and iPad paired.

Yep. Since it's not really "paired". You are connecting the the Spark (or the Spark RC) WiFi network.
