I am using Drone harmony for mapping, using waypoints. You can also use Drone link. Drone harmony is straightforward easy to use. A few things you can sort out, but there's a lot of good You Tube tutorials.

DH works fine to capture a series of overlapping photos to compile an Orthomosaic 3d map. I used 'maps made easy' to compile the photos. The only problem was that the accuracy of the EXIF data on the spark photos was only to the nearest second. I had to find GCP's in google maps to pull map...

DH with android 10 works fine for me. Just not 'droid 11'. That's the fault of DJI, I've heard, not DH.

Drone Link and Drone Harmony. I'm currently using Drone Harmony trial. It works seamlessly. In it you can choose your overlap, and flight elevation.

You've been mis-informed. I've just completed an orthomosaic of an acre of ground. I used Drone Harmony but you can also use other flight programming software like Dronelink. The programmed flight took about 7 minutes to get a 80% overlap series of photos and it got good detail.
